Apple Cinnamon Muffins: Gluten Free

Ingredients:

Muffins:

  • 3 c gluten free flour mix (or regular all-purpose flour)
  • 3/4 t xanthan gum (omit if using regular flour)
  • 3/4 c sugar (or coconut sugar)
  • 1 t salt
  • 4 t baking powder
  • 2 t ground cinnamon
  • 1 t ground nutmeg
  • 2/3 c apple sauce
  • 2 eggs (or additional 1/2 c applesauce)
  • 2/3 c milk or nut milk
  • 3 peeled, cored and chopped apples

Crumb Topping

  • 1/3 c packed brown sugar (or coconut sugar)
  • 2 T gf flour mix (or regular flour)
  • 1t cinnamon
  • 1 T cold butter (cold vegan butter or solid coconut oil)

Tools:

  • Muffin tin
  • Paper muffin liners

How to:

Step 1: Pre-heat & Prep

Pre-heat oven to 375° and grease 12 muffin cups or place paper liners in them.

Step 2: Mix Dry Ingredients

Stir together flour, xanthan gum, sugar, baking powder, salt, cinnamon and nutmeg.

Step 3: Mix Wet Ingredients

Combine applesauce, eggs and milk.

Step 4: Combine All Ingredients

Add wet ingredients to dry and stir together until smooth. Should form a smooth thick batter, similar to brownie batter. Mix in chopped apples.

Step 5: Fill Muffin Cups

Fill muffin cups 3/4 full with batter.

Step 6: Make Crumb Topping

Combine brown sugar, flour and cinnamon until well mixed. Chop up butter into small pieces and cut in. It is often easiest to use your fingers to gently break up the butter and press it into the dry mix to create a crumbly consistency.

Step 6: Sprinkle & Bake

Sprinkle crumb topping onto muffins. Bake for 25 – 30 minutes or until a toothpick inserted in the center comes out clean.

Step 7: Cool, Enjoy, Store

Cool in muffin tin for 5 minutes then move to cooling rack. Enjoy whenever you like but be sure they are completely cool before storing (around an hour). Store in an airtight container.

    Oh dear, I’m so hungry now! ? I’m too much of a cooking/baking newbie to try this recipe straight away, but I will bookmark for the (near?) future!
