Weeknight Mushroom Chicken (Paleo) Recipe

Enjoy this super easy mushroom chicken recipe! No need to follow the recipe exactly… feel free to add more or less mushrooms based on your preference!

Mushroom Chicken Recipe Ingredients:

  • 4 Chicken Breasts
  • 3 Cloves Garlic
  • 2 Shallots
  • 3 c Mushrooms (doesn’t have to be exact)
  • 2 c Chicken Broth
  • 2 T Cornstarch or Arrowroot Flour
  • 4 T (1/4 c) Cold Water
  • 1 Yellow Squash
  • 1 Zucchini
  • Avocado Oil
  • Roasted Garlic Cauliflower Rice

Step 1:

Preheat oven to 375°, Using mandoline, slice zucchini and squash into rounds and toss in avocado oil until coated. Place in oven and bake 30 minutes.

Step 2:

Using mandoline slice shallots and mushrooms, keeping them separate.

Step 2:

Cut chicken into bite sized pieces. Coat deep sauce pan with avocado oil. Mince garlic, warm over medium heat. Place chicken in pan and salt and pepper. Brown, turning occasionally.

Step 4:

When chicken is browned put sliced shallots into pan and cook until soft and translucent.

Step 5:

Place mushrooms into pan and cook until soft. We LOVE mushrooms in our family so we always used extra! YUMMM!

Step 6:

Pour chicken broth into pan. Mix cornstarch (or arrowroot flour) and cold water in a small bowl until combined. Heat broth to boiling scraping up any bits on the bottom of the pan. Gradually pour cornstarch water mixture into pan while stirring to thicken.

Step 7: Serve
