Delicious and nutritious all fruit popsicles that are sure to be a crowd pleaser this summer! The kids won’t even miss the sugar and food coloring!
- 1 ripe banana (fresh or frozen)
- 6 medium strawberries (fresh or frozen)
- 1/2 c blueberries (fresh or frozen)
- 1 can full fat coconut milk (blended)
Make sure that the coconut milk is well mixed. It is best to do this in the blender. No need to rinse it after just pour into a seperate container and save for future steps.
Put all of the strawberries, 1/4 – 1/3 banana and 2T coconut milk in blender and blend until smooth. Pour into popsicle molds until they are about 1/3 full. Place lid on and slide popsicle sticks through the slots and into the strawberry mixture. Place in freezer and wait 1 hour before continuing.
Place 1/2 c coconut milk and 1/4 – 1/3 banana in blender and blend until smooth. Carefully remove popsicle mold lid ensuring that sticks stay in place. Pour coconut mixture into molds leaving1/3 empty for remaining blueberry mixture. Replace lid. Place in freezer and allow to freeze for at least 45 minutes before continuing.
Place blueberries, 2T coconut milk and 1/4 – 1/3 banana into blender and blend until smooth. Carefully remove the popsicle mold lid ensuring that sticks stay in place. Pour coconut mixture into molds until full. Replace lid. Place in freezer and allow to freeze for at least 1 hour.
Remove from mold and ENJOY!!!
You might need to let them sit on the counter for a minute or run them under warm water to get them to release from the mold. Leave uneated popsicles in the mold for later or remove and wrap in wax paper, cling wrap or put them in individual baggies.
